Tanna-Adventures | Rachel's Restaurant.
Rachel's Plat du Jour meals regularly feature in compliments received by Tanna-Adventures.
Outlook from Rachel's Restaurant.
Rachel's Restaurant is located at centrally on Rachel and Esso's property and lies at the heart of their tour operation. Located under a substantial Banyan tree, the restaurant is surrounded by Rachel's garden providing a colourful setting when in flower and includes a flat lawn that spreads out from the front, inviting guests to view the impressive landscapes.
To the South, directly in front, visitors are able to take in bush covered hills, valleys and striking ridge-lines that include the remarkable Mt Yasur Volcano. This is complemented by unfolding horizons to the east that include colourful dawn displays and expansive coastal views. The facility itself is located in a rural setting with Esso's Kastom village nearby and local subsistence farming and bush living provide a distinctively Ni-Vanuatu backdrop.
Rachel's Restaurant - Exterior.
Rachel's Restaurant - Interior.
In the centre of the restaurant is a foundational trunk that has significant symbolic meaning to the Kapum family, and functions in the building as a major structural support to the roof. The walls are lined with hardwood boarding, blending with the diagonally laid bamboo along the top half. The combination with the leaf ceiling and exposed roof framing presents a tropical ambience to the interior.
Possessing four tables, each catering for four diners, allows the restaurant to serve up to sixteen (16) guests, although extra tables can be brought in as needed. Ample room is available around the central trunk to set a variety of table configurations.
Rachel's Restaurant - Cuisine.
Rachel's meals are constantly complimented on by guests, and meals are always "Plat du Jour" to make use of fresh seasonal produce. Featured around fish, chicken or beef, the dishes are a fusion of island and western cuisine making full use of the communities horticultural garden. Amy's garden also provides a wide variety of organic vegetables for a number of resorts on the island, with the rich volcanic soils of the highlands region ensuring produce that is full of flavour.
Traditional foods are not forgotten, and while most dishes on Tanna are served with rice, Rachel will include tastings of yams, taro, and banana cooked different ways if guests would like to taste. Traditional staples are provided from Rachel's kastom garden, along with kumala, bush greens, herbs and spices. Rachel can also be persuaded to make the simple, but notable Tannese meals such as Tanna-soup.
